Single Session Classes

Choose your workshop and learn how to make beautifully decorated cookies, cupcakes or layer cakes. Tuition and all materials and tools provided for the  practice of skills.

Birthdays, anniversaries, engagements, baby showers (gender reveal?), wedding favours, moving to a new home, work or sport gatherings. There's always a special occasion coming up - get ready now to surprise your friends, workmates, family or significant other! Choose from the following classes or get a group together and request a time to suit yourselves. 

Use of all materials and equipment is included in the tuition fees and cookies or cakes are mostly provided for the practice of skills, or provide your own if you prefer. You will need to bring your own Christmas cake for the Traditional Christmas Cake workshop.

What to bring: a full apron to protect your clothing and a suitable tray or container in which to take your work home in a single layer.

2021 Classes 

Fondant Dressed Cookies - 
A great place to start - steady hand not required! You will decorate many beautiful sugar cookies and learn a variety of fondant skills. These make lovely gifts!  $69

Chocolate Drip Cake - Create a tall and eye catching layer cake, filled and coated in buttercream and elegantly dripped with a smooth chocolate ganache. Dress it with a glorious assortment of chocolate deliciousness including handmade decorations from tempered chocolate and you have yourself an all-occasion masterpiece!  $125

Chocolate Overload Cupcakes - Decorate six cupcakes with piped swirls of luscious white and rich chocolate ganache buttercream. Artfully arrange masses of chocolate decorations on top and drizzle caramel to finish. $75

Royal Iced Cookies - Make and colour royal icing - outline, fill and embellish sugar cookies with wet-on-wet techniques and over piping. Classic!  You'll never be short of a gift idea again!  $69
 Next class:   Thursday 11th February  7 - 10 pm    These will be Valentines themed. 

Royal Icing Eggs - Make and colour royal icing in pretty pastel shades, have a practice piping designs, then pipe onto a reusable egg mould. These can be filled with lollies or a small gift before sealing. You will pipe four half eggs (to make two complete eggs). Price includes reusable moulds (4 half eggs) $69.  Bookings will close for these classes on Tuesday 9th February as sufficient moulds need to be ordered in for these classes.

Royal Icing Transfers - Transfers are pictures or patterns made with royal icing and left to dry thoroughly before being used to fancy up cakes, cookies, cupcakes or even desserts. They will keep well for a very long time if stored carefully.  Learn to make, colour and pipe with royal icing to make a transfer (or two, or four, or...) Outlining, filling, wet-on-wet techniques plus over-piping.  A very handy and versatile skill set to have!  $60

Piped Buttercream Flowers -  Buttercream is a very versatile medium! But the right consistency is key. Make and colour your buttercream, then learn how to pipe the basic petal shapes to make a variety of beautiful flowers to take home for future use. Flowers may include blossoms, poppies, daisies, hydrangeas, magnolias, dogwood, roses, buds, leaves and more. $60

Piping Skills - Lace and Embroidery - Learn how to use royal icing to pipe cornelli patterns and delicate embroidery, brush embroidery, butterflies and lace pieces. Pretty!  $60 (Some previous piping experience recommended.)

Royal Icing Piped Flowers -  Discover how a piping nail can help you create a variety of flowers (may Include blossoms, daffodils, daisies, hydrangeas, pansies, roses, forget-me-nots, sweet pea and leaves) from royal icing. These will last for a very long time and are handy for rapid dressing up of all sorts of sweet treats. $60

Buttercream Topped Cupcakes - Make silky smooth buttercream and learn several piping techniques to top your cupcakes. Then adorn them with modelling paste decorations and sugar pearls. $69

Piped Buttercream Flower Cupcakes  -  Learn to make and colour a buttercream suitable for piping flowers.  You will use petal and leaf tips and to create rose, daisy, magnolia, blossom, poppy and scabiosa on top of six cupcakes    $69

Fondant Cupcake Toppers - Learn how to use a variety of techniques to make a range of toppers in different styles. This is a great way to prepare for a special occasion in advance, allowing you to finish your cupcakes quickly and professionally. $60

Stencilled Cupcake Toppers - A great way to learn how to stencil! Create beautiful and striking stencilled toppers using fondant and royal icing. Embellish them further with modelling paste decorations, sugar pearls and lustre dusts if you wish. $60

​You will need to bring a flat oven tray or similar, able to accommodate 12 toppers, to take them home safely.

Fondant Covered Cupcakes - Embellish your beautiful fondant-over-buttercream cupcakes with lovely modelling paste flowers, leaves, butterflies, royal icing and sugar pearls. You will learn many fondant skills as well as learn basic piping techniques with royal icing. $69 (These are very pretty and delicious to eat.)

Modelling Paste Decorations - Learn how to make, colour and use a modelling paste neatly to create a range of flowers, butterflies, hearts and leaves to take home to take your baking presentation to the next level. Customise them with sugar pearls and petal dusts. These last a long time. $60

Ganache Swirled Cupcakes - Dress 6 beautiful chocolate cupcakes with delicious whipped chocolate ganache and tempered chocolate decorations you have made. $85 (These can be frozen without the chocolate decorations)

Handmade Feature Flowers - (New classes!) Five classes held 7.00 - 10.00 pm. A variety of beautiful statement and filler flowers, and leaves hand modeled from edible modelling paste and wired, ready to create stunning arrangements on formal cakes. $69. Flowers may include poppies, anemones, peonies, ranunculus, roses, lillies, orchids, along with several smaller filler flowers, buds and leaves.

Fondant Covered Layer Cake - Learn to form even layers, fill, crumb-coat and cover with delicious buttercream, before covering with smooth fondant. Decorate and voila! A beautiful 7 inch round celebration cake!   This is a 5 hour class $120

Buttercream Rose Swirl Layer Cake  -  A beautiful and popular celebration cake. Layer, fill and crumb-coat a 7 inch round cake before covering with beautiful piped buttercream rosettes.  Ombre, two-toned or single coloured - the choice is yours. $95

Traditional Fruit Cake - Bring along your own 8 inch (20cm) round fruit cake and learn how to dress it professionally. You will trim and patch your cake before glazing it and coating it in marzipan/almond icing to create a smooth surface for the fondant covering. Finish your cake with a handmade decorative motif and piping and be proud! $125

Christmas Themed Cupcakes - These will be lots of fun! Use buttercream, fondant, royal icing and modelling paste to decorate six festive cupcakes to wow your family, friends or workmates. And, of course, all the skills learned are transferable to other projects!  $69
